The Level 2 Professional Cookery Diploma offers study in a range of cooking styles. The focus shifts from cooking methods in Level 1 to preparing and cooking different commodities.  From stocks, soups and sauces to the preparation and cooking of shellfish, producing hot and cold desserts and preparing and cooking meats using a range of methods, this course will cover the necessary knowledge required to work as a senior chef.

Ideal if:

You have experience working in a kitchen and would like to improve your skills. You'll be studying at a college with Gold Accreditation, 3 Centre's of Excellence and an AA HIghly Recommended Rosette.

You’ll need:

It would be helpful to work in the industry or have a work placement but this is not essential. Usually adult learners are working in the industry.

You’ll learn:

Both sides of the hot plate, so as well learning key cooking methods and techniques such as making stocks, soups, sauces and the preparing and cooking of shellfish, hot and cold desserts and a variety of meats, you will also be developing your front of house skills in our college restaurant.  From Barista skills, making macchiatos and cappuccinos, to advising customers on wines and creating cocktails.

You will also look at kitchen operations, costs and menu planning, as well as devising healthier dishes and considering dietary requirements.  Of course, theory does play a part and it is vital that you continue to learn about food safety and your own health and safety.

To be assessed throughout your course through assignments, projects and practical examinations.

You’ll go on to:

After completing this course you can go onto the Level 3 in Kitchen Larder or Patisserie and Confectionary. This is offered as a full-time option or day release.
