This masterclass will help develop your knowledge and skills in preparing meat and poultry products, from butchery to preservation. You will explore the technical side of cooking using various ingredients in a number of different ways. You will also experiment with enhancing your desserts incorporating the use of molecular cookery including; foams, airs and spherification. You get the opportunity to revisit some classic sauces and dressings and explore their place on the modern menu.
