Butchery is a highly-skilled profession steeped in tradition and butchers will display understanding about a range of meat species and the various techniques needed to process and/or produce products. In addition, butchers will be able to cut, prepare, package and present meat products to the standards required of the business and specialist needs of commercial and/or consumers. Butchers will have a range of skills, knowledge and behaviours that can lead to rewarding careers in the butchery industry, not only in the UK but across the world.

Ideal if:

Ideal for anyone interested in starting a career in the butchery industry, either retail or processing or for current employees wishing to upskill and gain a recognised qualification.

Entry Requirements:

Math and English at Level 2 preferred although can be achieved as part of the development programme/apprenticeship. Apprentices will be required to have achieved level 1 English and maths and to have taken Level 2 English and maths tests prior to sitting the End Point Assessment.

What You Will Learn:

Working in a highly regulated industry, butchers must have a comprehensive understanding of health and safety practice that is matched with knowledge of applied food safety and hygiene management systems. They will also possess a technical understanding about a range of meat species, provenance supply chains and techniques (automated and craft) needed to process and /or produce products in a lean manufacturing or retail environment. They will have responsibility to ensure precision in the cutting and presentation of meat products as required by commercial and /or domestic consumers.

Expect:

Typically x 6 two day blocks throughout the year.

Progression:

An opportunity to progress onto a higher level Butchery standard on completion of the Level 2  Apprenticeship Standard.
