Ewald Notter: Masterclass and Demonstrations
Lauded as a master of modern day confectionery arts, Chef Ewald Notter is popularly known as a celebrated competitor, eminent teacher and esteemed author. He has an eye for colour, an appreciation for textures and a keen sense for details. In the same way fine artists use acrylics, oils or clay as their mediums, Ewald prefers to create his masterpieces by using a palette of sugar and chocolate. Chef Notter is widely respected as an innovator, having introduced many ‘firsts’ that have helped mould the craft and advance the industry.
He has worked and competed in over 15 countries, winning numerous awards including at least 15 gold medals, as well as National and World Pastry Team Champion, and Pastry Chef of the Year. As part of the 2001 U.S. National Team in Lyon, France, he scored the highest ever recorded number of points for sugar, 699 out of 700, helping the U.S. Team achieve its first and, so far, only Gold Medal.
He was also the first pastry professional inducted into the Pastry Art and Design Hall of Fame. Chef Notter remains today a prominent figure in the most illustrious competitions as venerable coach and distinguished judge.
We are delighted that the world famous champion patisserie chef Ewald Notter will be hosting workshops in the UK with The Cornwall College Group for the first time!
Sugar Showpiece Demonstration

Watch how Ewald creates a stunning, artistic, sugar showpiece; from his initial idea through his sketch to the final artwork, working on the design of the structure and the balance of volumes and colours. Watch how he hand crafts original shapes and brings them to life by adding colours, depth and movement to the sculpture. See how skillfully he uses an airbrush, to add dimension to each component suggesting an evolving tale.
The demonstration will focus on various clever techniques to obtain the best shine on blown sugar and rich satin for ribbons and flowers. Ewald will show how it is possible to achieve clean connections when assembling the showpiece; a must if you wish to compete. You will surely enjoy this unique opportunity to see Ewald create a masterpiece that will take your breath away.
