Ewald Notter: Masterclass and Demonstrations
Lauded as a master of modern day confectionery arts, Chef Ewald Notter is popularly known as a celebrated competitor, eminent teacher
and esteemed author. He has an eye for colour, an appreciation for textures and a keen sense for details. In the same way fine artists use
acrylics, oils or clay as their mediums, Ewald prefers to create his masterpieces by using a palette of sugar and chocolate. Chef Notter is
widely respected as an innovator, having introduced many ‘firsts’ that have helped mould the craft and advance the industry.
We are delighted that the world famous champion patisserie chef Ewald Notter will be hosting workshops in the UK with The Cornwall College Group for the first time!

Two day masterclass. £600 per person, including lunch both days and limited edition chef’s jacket
In this two day interactive workshop, you will have the amazing opportunity to work with the No.1 World Champion Pastry Chef, helping to develop your skills and experience in working with chocolate.
On the first day of the masterclass you will work on a variety of palate-pleasing artisan chocolates made with soft and medium textured ganache’s, as well as gianduja and caramel. The chocolates will be finished using classic and modern techniques, demonstrated by Chef Notter, and for you to try yourself; to achieve stimulating and appetizing appearances.
Working in our state-of-the-art pastry kitchen, you will have all the necessary tools and equipment required to emulate Chef Notter’s mastery and be able to design, experiment and produce a wide range of individual chocolates to take away, or eat of course!
On the second day of the masterclass you will be handling tempered chocolate in your own dedicated marbled area using specific individual tools. Chef Notter will get you building an elegant mid-sized decorative showpiece, using various hand-skills to help with tasks like cutting and casting the base and supports. You will also be embracing the techniques to smooth, shape and add texture to chocolate, of which many techniques have been perfected by Chef Notter himself. Your finished chocolate showpiece will represent form, texture, colour and movement in harmony, influenced by Chef Notter’s own work and you will also be able to create an elegant knife dipped flower to accompany any designs If chocolate work is your passion or is essential to your business, then this two day masterclass by the world’s No.1 pastry Chef is not to be missed.
